Gluten Free Curried Quinoa
1 1/2 cups chicken or vegetable stock
2 tsp curry powder
Pinch of cayenne pepper (optional)
Salt and pepper, to taste
1 cup quinoa
2 Green onions, chopped (optional)
Add stock, curry, cayenne, salt, and pepper to a medium size saucepan. Bring to a boil over high heat (uncovered). Add the quinoa, bring back to a boil, then reduce heat to low. Cover and simmer for 12 to 15 minutes, stirring occasionally. Remove from heat. Finally, remove the lid and fluff quinoa with a fork.
If you like, feel free to top with chopped green onions. Since I have a ton of green onions on hand (I recently harvested over 200 green onions from my garden) I decided to add some to this dish and boy is it YUMMY!
My daughter is also a huge fan of curried quinoa. I actually had to double this recipe the last time I made it so there would be enough for everyone. That little girl can eat an entire dish all by herself, easily!
